Biography
Mrs. Erickson is an Instructor and Director of the Didactic Program in Dietetics (DPD) in the School of Human Ecology in the College of Applied and Natural Sciences. Originally from Missouri, she has resided in Louisiana for over 25 years and now considers Louisiana home. Prior to working in education she gained experience in clinical and community nutrition as a registered dietitian nutritionist. Coming from a family of educators instilled a love for working with students and teaching. At Louisiana Tech she has had an opportunity to share her passion for nutrition with new generations of students. For over 25 years at Louisiana Tech University she served as the Dietetic Internship Director. She now is enjoying working primarily with undergraduate students as the DPD Director. As a graduate faculty member she has served on numerous graduate thesis and non-thesis committees with a special interest in medical nutrition therapy, applied dietetics, and community education.
